    • winter soup with low protein pasta


      small slice of smoked pork, preferrably with fat (note: this ingredient is added for smell only, it is removed from the soup and not eaten, so don't worry about phe in this ingredient - it's just for aroma)
      1/2 cup of small sized low pro noodles such as angel hair vermicelli or annelini
      1 carrot
      1 shallot
      1 potato
      small bunch of parsley
      salt, pepper to taste

      - in a saucepan with water add slice of smoked pork and boil on medium heat.
      - clean the carrot, potato and onion and slice thinly
      - add carrot and potato to the pot with water and slice of pork
      - in a small frying pan sautee the onions in very small amount of oil untill golden
      - add the onions to the pot and continue boiling on medium heat untill carrots and potatoes are soft.
      - separately cook the low protein noodles, drain and add to soup after the potatoes and carrots are cooked.
      - at the very end add chopped parlsey, salt and pepper to taste.

      Before serving remove the pork from the soup and give it to a non-PKU person. :)

      Note: this soup reheats well and pasta does not swell up because it was pre-cooked separately.
