    • easy beet salad

      1 large beet
      2 cloves of garllic
      3-4 branches of parsley
      vegetable oil
      salt pepper

      - put beet with skin on in pot with water, boil untill soft (about 40min) when poked through with knife
      - drain hot water, cool the beet, peel the skin off and grate the beet on large cheese grater
      - add finely chopped garlic, parsley, salt and vegetable oil. Mix well
      - serve chilled

      option: you can use mayonnaise or sour cream instead of oil for dressing.
